Easy Blueberry Muffins in Under 30 Minutes

These blueberry muffins are so easy to make and really tasty.  My family loves them.  As long as I have blueberries in the house, I can whip these up in no time.

  • Prep Time 10 Minutes
  • Cook Time 20 Minutes
  • Total Time 30 Minutes
  • Serves 10 People

Ingredients

  • 1 1/2 cups regular all purpose flour
  • 3/4 cup white granulated sugar
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1 egg
  • 1/3 cup tasteless oil like canola (NOT olive oil)
  • 1/2 cup milk
  • 1 tsp vanilla (optional)
  • 6-8 ounces fresh blueberries

Instructions

  1. Mix dry ingredients together in a bowl (flour, sugar, salt, baking powder)
  2. Mix wet ingredients together in a 2 cup measuring cup (oil, milk, egg, vanilla)
  3. Pour wet ingredients into dry ingredients and mix with a wisk or fork until it just comes together. Do NOT overmix. It will be thick, sticky and wet.
  4. Fold in blueberries.
  5. Use an ice cream scopper to scoop dough into cupcake tins lined with cupcake liners. (This makes cleanup so much easier).
  6. You will get between 8-10 muffins depending on the size of your cupcake tin.
  7. Optional: sprinkle sugar (white or turbinado) on top of the muffin before cooking to give it a crunch.
  8. Bake for 20 minutes at 400 degrees.
